Three pickings are done throughout the vintage period over a time period of around 6 weeks. This gives us much more variety when it comes to blending the wines for producing the best possible Shiraz for each year. Typically our wines are very similar each year due to the fact we are in total control of the management of the site from pruning to when the wine goes into bottle. Only Mother Nature has the ability to change the wine characteristics and although some years have been a challenge we have been able to produce great valued wines year in year out.\u003c\/p\u003e\n\u003cp\u003eWinemaking is carried out by ourselves, in a traditional minimalistic way. The grapes are destemed not crushed then fermented for 7 to 11 days. During this time the ferment is pumped over 2 - 3 times a day \u0026amp; kept at a temperature of 22-25 degrees to ensure that maximum flavour and complexity are extracted from the fruit.
