Bring a full kettle of water to the boil. Peel the eschallots and garlic, finely chop. Cut bullhorn chilli in half lengthways, remove all the seeds and finely dice. Finely grate the pecorino cheese. Cut the larger pieces of porcini mushrooms in half. Place mushrooms into a bowl and cover with boiling water. Bring a medium size frying pan to high heat. Drizzle olive oil and add the spinach leaves. Sautée for approx. 30 secs until vibrant green, then remove from pan.
